Well, I never thought it would happen, but for the first time in a long time I have a sore throat that has lasted more than one morning. This one is pretty bad, it hurts to talk and swallow. Other than a slight headache though there are no other symptoms. So like I always preach, I immediately made myself some chicken soup. This time I used the crockpot. Here is the recipe.
Ginger Lemon Chicken Soup
(good for upper respiratory problems)
In a large stock pot or crock pot, place a whole chicken or several bone-in cuts of chicken.
1 peeled onion
4 crushed cloves of garlic
1 inch of fresh ginger, peeled and chopped
1-2 carrots snapped in half
1-2 stalks of celery snapped in half
water to fill up the pot
about 1/2 tsp salt per quart of water
1 bay leaf
1 tsp peppercorns, slightly crushed
Cook on medium low heat for 6-7 hours (high setting on crock pot) or until chicken is coming off the bone.
Strain into another pot, debone chicken, slice carrots, and add these back to broth
squeeze juice of 1 lemon into soup
peel and chop another inch of ginger, add to soup
taste and add more salt if needed
Check back with me tomorrow to see if it helped!!
While we were eating dinner Miriam (as usual) started talking about potty issues and I said “Miriam, we don’t talk about that at the table.” So she said, “OK Mommy,” thought for a second, and added, “We can talk about it on the floor?”
I’m adding this to make Mel feel better. There were two bad things the girls did today. One was, they snuck a brand new 2 cup bag of shredded cheese up to their room RIGHT PAST me… I was in the living room nursing and they had to pass me to go upstairs. Well, they didn’t just bring it up to snack on it. They must have thought the orange confetti look struck just the right note for their carpet and beds.
Then I decided to give them a rare treat and let them watch a DVD so I could figure something out in the sewing room. While Miriam was watching, Jireh was getting a full container of Morton Salt (the 26 oz one) and dumping it all over my bedroom floor and Christina’s bassinet, and some in the kitchen.
I ordered a vacuum cleaner today.
